Who likes chicken Fajita's with fresh veggies!? :) This meal did not coast a lot, it's simple, time efficient and no oil needed :)

Lightly Sautéing Fresh Vegetables for your Chicken Fajita! You can make your veggies very tender or still on the crunchy side, I prefer more crunchy :)

Ingredients for a Chicken Fajita

  • Low sodium Chicken Broth
  • Fresh cut Red, yellow and green peppers and red onions
  • Small package of chicken breast cut thin (if cooking for the whole family obviously purchase more) ;)
  • Goya Adobo for the "south of the border" flavor...just need a little :)
  • Whole wheat tortillas
  • Shredded cheese
  • Sour cream
  • Salsa

Irene, haha my thing is, I cook a lot and say to myself, ok I'll save this much for lunch or dinner, but then get hungry and eat the "supposed" to be left overs hahaha.  Working on that :) Next time I'll know to keep some aside ;)

Steve, it sure was. I love presenting the food. The colors and textures visually help so much to entice your appetite, especially if you are cooking for a loved one who maybe ill or just not feeling that great.

Liz, oo yes before I too was using oil and it tasted great but afterward I felt "heavy" not weight wise, it was just knowing that oil (at least in my mind) was going to my heart. So my friends grandma said, no need for oil just use low sodium chicken broth...I said wow!! I need to share this :)

JaneAnne, fix away...so yummy and you can put your own twists to it as well, add shrimp..mmm :)

Laura - You have presented a great recipe for one of my favorite dishes.  The thing I like about fajitas is that you can prepare the veggies and the meat ahead, and refrigerate.  Then when you come in tired from work, you can cook it up relatively fast!

William, it was soo good to eat and the left overs even better because the juices soaked into the veggies and chicken :)

Jason, it was and the smells even better! That is why I stress presenting your food even when cooking, it all makes a difference :)

Myrl, that is very true :) its a recipe that can be used for so much, lunch, dinner...even breakfast :)
