It won't be long now, and I can't wait. In just a few short hours my family will begin to gather from hither and yon for Thanksgiving dinner.
I wanted to take this opportunity to share one more recipe before the holiday.
ANTIPASTO:
Ingredients-
- 3/4 cup Mozzarella Cheese (1" cubes)
- 3/4 cup Italian Salami (1" cubes)
- Red & Green Bell Peppers (sliced into 1" squares)
- 3/4 cup Marinated Artichoke Hearts
- 3/4 cup Olives (including varying kinds, like green and Kalamata)
- 3/4 cup Grape or Cherry Tomatoes
- Button Mushrooms
Slice Button Mushrooms in half, and set aside in lemon juice, while preparing other ingredients.
Place all ingredients in together in a bowl, and toss lightly. Use only the juice from the Marinated Artichoke Hearts, and the Olives, for dressing.
Place in refrigerator, overnight before serving
