Upon moving back to Amish country(Lancaster,PA.) 22 years ago , we were given a cookbook by friends from church. We have referred to it so many times that we've lost it's front cover! One of our favorite and easy to make side dishes ( from the above) is always in demand from our invities ! Are you gonna have that Corn Pudding again is often heard ? So here goes:
1 pkg.Jiffy corn muffin mix
1 can creamed corn
1 can corn Niblets,drained
1 c.sour cream
1 stickbutter ( or margarine)
Put all ingredients into a large mixing bowl and combine(use mixer on low speed). Pour into 1.5 quart casserole and bake at 350 for 1 hour. Recipe easily doubles/triples.Please enjoy this great recipe and remember not to throw the cow over the fence some corn !
