Blueberry Muffin Recipe ~ or Raspberry Muffin Recipe, this time of year

This recipe is great with either Blueberries or Raspberries, but my family loves the Raspberry Muffins because I don't make them often, and you can't find Raspberry Muffins just anywhere.

2 TBSP Real Butter
2/3 C. Granulated Sugar
2 Eggs
1/2 C. Milk
1/8 tsp. Salt
1-1/2 C. Flour
1 tsp. baking powder
1 C. (or more) Blueberries or Raspberries


Cream together the butter, sugar and eggs.  Add the milk.  In a separate bowl, combine the dry ingredients and then add to the wet mixture, stir it well and THEN add the fruit and FOLD it in.  I like to overfill my muffins (almost to the top of the pan with batter).  Sprinkle a pinch or two of granulated sugar on top of each muffin prior to baking.

Bake at 350 degrees for about 40 minutes.  If you make smaller muffins, check them after 30 minutes.

What an easy recipe.  I will give it a try, as our blueberry bushes are just getting ready to burst.  We have two large bushes that we planted, plus we are fortunate to have tons of low-bush blueberries that grow naturally in the woods.  Yum.

Hi Kathleen, I'm sure you and your daughter will love these muffins.  It rained here all day yesterday, so we didn't get to pick berries yet.  I'm hoping we'll get some today and I can make muffins before we go out to dinner for our daughters birthday.  Perfect to come home to for dessert.

Gwen - the only raspberry muffins I've seen are the ones in a mix at the grocery store.  The fresh raspberries really make these muffins something special.

Kathryn - Wow, you are very lucky to have wild blueberries!  We have 3 small blueberry bushes that we planted last year, but I don't know if I"ll get enough to make muffins.  Our raspberries grow wild and we have 4 acres, they are everywhere.
