It is October. Traditional use of harvest veggies has begun and in the next weeks we will see pumpkins in many venues.
Last week while helping to plan a major harvest celebration we utilized a couple of pumpkins as serving conveyances.
Not only do they look festive, they can be used to serve a variety of vegetable dips! Use a little creativity,carvecthe top into something and remove it. Scoop the seeds out, clean them and toast them on a baking sheet you have sprayed with vegetable spray and season them for a healthy snack. Enlarge the opening for easy access and attach the top with toothpicks.
The one pictured was used to serve a large portion of artichoke spinach dip. A dish of vegetable chips was close by. Before we put the dip inside, we lined the inside with bright purple cabbage leaves. The result was downright pretty.
The same sort of proceedure can make a pretty centerpiece for floral arrangements. With family gatherings just around the corner, we wanted to share this idea. It is simple to do, it looks great... and it can be taken apart after the event and baked and used for your favorite pumpkin dish! What a deal!
