Growing up near South Central PA we participated in an annual New Years Day tradition, pork and sauerkraut. It is the belief of the PA Dutch culture that partaking in this meal helps guaranteed good luck in the coming new year. Today it starts with a crock pot , a roasting pork and several lbs. of fresh sauerkraut. We cook ours all day long(9-10 hours). Added to the meal are two other familiar staples, mashed potatoes and apple sauce. you can also add fresh bread and apple butter. Also to help local citizens enjoy this holiday feast, many fire companies are serving this meal "family style" all across Lancaster Co..Well we've just completed our New Years Day meal and are now assured of good luck in 2012 !
