This isn't technically "ice cream" but it's a healthier substitute and an easy treat.
The secret ingredient is frozen bananas! Blend together frozen banana slices (*peel and slice bananas before freezing!!), cocoa powder and coconut milk and voila...."ice cream"
I usually freeze slices from 2 to 3 bananas, add a tablespoon or so of cocoa powder and about 1/4 to 1/2 can of coconut milk.
The more ripe the bananas are, the sweeter they are and I haven't found a need for any added sweeteners but you could add sugar or honey.
And it does taste like banana but it's a really quick and tasty treat without all the guilt of regular ice cream!
My inspiration for this was from a recipe using peanut butter with bananas as the base - Single Ingredient Ice Cream
And you can definitely get creative with add ins/substitutions on this basic recipe.
