We all know the holidays are hectic (well, not me, I've been done for weeks.) I've been enjoying some baking, cooking and crocheting which, for me, is extremely relaxing. I just finished my last batch of peanut brittle and thought some of you might enjoy this super, SUPER easy microwave recipe which can be made in less than 10 minutes!!!!
Microwave Peanut Brittle
1 cup white sugar 1 tablespoon butter
1/2 cup light corn syrup 1 teaspoon vanilla extract
1 cup salted peanuts 1 teaspoon baking soda
Have all of your ingredients ready and measured out because this candy sets up very quickly.
Line a cookie sheet with tin foil and spray with cooking spray. Stir together the white sugar and corn syrup in a 2 quart glass bowl - DO NOT USE PLASTIC. Microwave on high for 3 1/2 minutes. Quickly stir in the peanuts and microwave on high for 2 1/2 minutes. Add the butter and vanilla extract and microwave for one more minute.
Stir in the baking soda and quickly stir until all of the foam has subsided. Pour into the prepared cookie sheet and let cool. Once cooled, break into pieces and store in an airtight container.
A tip: for thinner peanut brittle, heat the cookie sheet with the tin foil on it so it will spread out more. To clean the bowl, use VERY hot water with lots of dish soap. To use as a gift, I find those cute little holiday tins at the dollar store or pretty cellophane bags (I got mine at Walgreens.)
WARNING: THIS IS EXTREMELY HOT WHEN FIRST COMING OUT OF THE MICROWAVE - WATCH YOUR FINGERS. IF YOU WANT THE KIDS TO HELP, THEY CAN HELP BREAK UP THE PIECES AFTER IT'S COOLED.
