A Recipe - Chicken Tuscan Medley

When my family gathers together, we often enjoy a family recipe - an adaption of Chicken Cacciatore. The difference is that this recipe has ingredients like artichoke hearts, olives capers and roasted sweet peppers added.

- Chicken Parts
- Yellow Onions
- Garlic
- Stewed Tomatoes
- Sun Dried Tomatoes
- Roasted Sweet Peppers
- Tomato Sauce
- Marinated Artichoke Hearts
- Capers
- Olives (Greek, Green, Black)
- Fresh Italian Herbs (Oregano, Marjoram, Thyme, Rosemary, Basil)
- Shredded Parmesan Cheese
- Several Types of Pasta (Penne, Mostochioli, Rigatoni, Shells, etc.)
Sauté chicken parts in olive oil, that has had grated garlic added.
Once chicken parts have been sautéed, add a little more oil to pan, and add, sliced and halved onions to the pan, and sauté, Add stewed tomatoes, with most of the juice removed. . .Then add, tomato sauce, and sun dried tomatoes, artichoke hearts, capers, and olives. Simmer/stew until chicken is completely cooked.
Place on bed of pasta, and sprinkle grated cheese on top.
