Napa Chicken Salad Recipe
Ingredients:
- 1 rotisserie chicken
- 1/3 cup seasoned rice vinegar
- 1/3 cup mayonaise
- 3 to 4 scallions, chopped
- 3/4 cup toasted hazelnuts or walnuts
- 2 cups red grapes
- 1 large head napa cabbage
- salt and pepper to taste
Directions:
Remove skin from chicken, remove meat and shred. In a large bowl, pour the rice vinegar over the chicken. Stir until the chicken has soaked up all of the vinegar. Add the mayonnaise, scallions, nuts and grapes and stir well. Place bowl in the refrigerator for up to one hour, or until cabbage is ready. Remove the tough ribs from the napa cabbage leaves and shred/slice the soft portions with a knife; you should have 4-5 cups of shredded cabbage. Add the cabbage to the chicken mixture and toss with salt and pepper to taste. Serve immediately. Serves 4-6 as a main course, 6-8 as a side dish.
