Saturday's Shots - Parsnips for Dinner


We've discovered a new favorite dish - fresh parsnips & red potatoes. This is a combination that we never expected to be so flavorful!

 

Parsnips

 

Wash & cut a few red potatoes into 1/2 cubes. Wash, peel and cube parsnips (1/2 cubes). Add a chopped red onion and 3-4 cloves of garlic. Lightly brown potatoes & parsnips (in olive oil) for about 5-8 minutes in a cast iron pan. Add pressed garlic & onion and cook for another minute or two over medium heat. Remove pan with veggies from range and place in pre-heated 400º oven; bake for about 20 minutes. We add a few chopped chives, a tiny bit of truffle salt and a healthy dose of ground bourbon pepper to flavor.

I love parnips and use them as a potato substitute. I recommned you also try jack fruit if you haven't yet.

I don't cook often, but must admit I discovered parsnips recently and they are delicious! George Souto - you must try them! They resemble a carrot but have a nutty flavor. A recipe called for parsnips and I'm happy I tried them. Thanks for sharing a new recipe, Debe Maxwell, CRS.
