Healthy Poke Bowl
At the request of Will Hamm, and inspired by Endre Barath, Jr.'s incredible scallop recipe this evening, I am sharing one of my favorite new recipes. About 3 months ago, I decided I needed to change my dietary habits as COVID had really opened the door for a BIG weight gain for me! While I have always loved cooking, being locked down set me on a fabulous cooking spree - and dining extravaganza! Yes, it was fun and boy, did I enjoy the wonderful dishes but, I did tire of having to buy a new wardrobe every couple of months! LOL
Now, I am trying to eat healthier and am forever on a mad search for delightful dishes that feel like I'm 'cheating' on my diet. This recipe uses cauliflower rice (don't knock it until you try it - it is AMAZING!) and all other healthy ingredients.
If you love seafood, which is already healthy, this dish will be delightful and filling...enjoy!
Ingredients:
7 oz crab or shrimp cooked
1/4 cup (.88 oz) scallions chopped (reserve 1 T)
1/4 cup (.53 oz) cucumber, sliced
1 cup cauliflower rice cooked and cooled
1/8 cup (.40 oz) jalapeño minced
1 Tbsp white onion thinly sliced
1 tsp sesame oil
1/2 Tbsp sesame seeds toasted
3/4 oz sliced avocado
1 Tbsp dried seaweed flakes (Found at Trader Joe's or you can sub dried parsley)
2 Tbsp rice vinegar (no sugar added)
Directions:
For the rice - mix vinegar and cauliflower rice and chill for 1 hour.
For the poke- mix crab, scallions, cucumber, pepper, onion, sesame oil and sesame seeds and chill for 1 hour.
Assemble- top rice with poke mix, garnish with avocado, reserved scallions & seaweed.
Serve & ENJOY!
