My Birthday Cake - So Awesome I'm Sharing the Recipe!

My sister is great at trying new recipes and you never know exactly where she's going to get the next one!  For my birthday, she made a "Hellman's Mayonnaise Chocolate Cake" and added the cherry pie filling to make it a "Black Forest Cake".  You have to know that my one of my very favorite foods is chocolate covered strawberries - she topped and surrounded the cake with luscious strawberries dipped in white and/or milk chocolate - YUMMY!  It was one of the moistest cakes I've ever eaten, which is why I decided to share her secret with my friends at Active Rain.  Here is a picture (after an hour drive in the car).

 

 

 

 

 

 

 

SUPER-MOIST CHOCOLATE MAYO CAKE 

Serves: 12
Prep Time: 5 Minute(s) 
Cook Time: 30 Minute(s)

1 box (18 oz.) chocolate cake mix
1 cup Hellmann's® or Best Foods® Real Mayonnaise
1 cup water
3 eggs
1 tsp. ground cinnamon (optional)


Instructions: 
  1. Preheat oven to 350°. Grease and lightly flour two 9-inch round cake pans*; set aside.
  2. Beat cake mix, Hellmann's® or Best Foods® Real Mayonnaise, water, eggs and cinnamon 30 seconds in large bowl with electric mixer on low speed. Beat on medium speed, scraping sides occasionally, 2 minutes. Pour batter into prepared pans.
  3. Bake 30 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes on wire rack; remove from pans and cool completely. Sprinkle, if desired, with confectioners sugar or fill and frost.
*Or, prepare cake mix as above in 13 x 9-inch baking pan and bake 40 minutes or until toothpick inserted in center comes out clean.



For A BLACK FOREST CHOCOLATE CAKE...do not flour baking pan. Evenly spread 2 cans (21 oz. ea.) cherry pie filling over bottom of 13 x 9-inch baking pan, top with prepared cake batter and bake 1 hour or until toothpick inserted in center comes out clean. Cool completely, then turn upside down onto serving platter.

Sounds great and I know it has to taste just as good as it looks.  I had some chocolate once that was made with Mayo - who would have thought that it would be so moist and yet so good!  It's something that everyone should taste at least once in their lifetime.  I LOVE chocolate.

Happy Birthday Tammy! The cake looks wonderful and I can believe the mayo would make it super moist. Just what all us "Take It Off In the Rain-ers" needs. LOL

I re read the recipe and wanted to mention, when I make chocolate cake, instead of greasing and flouring the pan, I use coco powder instead of flour in the pan.  The Ruddy Red Cocoa works best but regular cocoa powder does the trick too.
