This recipe is offered by special request from my friend, Mary Yonkers. I told her I was baking Polenta Bread to go with the ham and black beans I was cooking. So, Mary, this one's for you!
1 cup sifted flour
1 cup Polenta
3 tsp. baking powder
1/2 tsp. salt
1/4 cup sugar
1 egg, beaten
1 cup milk
1/4 cup cooking oil
Preheat oven to 425 degrees. Place all ingredients in a mixing bowl and blend together. Pour into a prepared 8-inch square pan and bake 15 - 20 minutes. Can also be baked in muffin tins.
Serves 6

Ps Aren't polenta and corn meal similar? (I have corn meal in cupboard)

Happy New Year, Mary! Polenta and corn meal are similar - Polenta has a rougher texture than corn meal. You'll have to tell me how you make your pork and sauerkraut.
@Mary - Something I put in my saurkraut and pork is red pepper flakes. If you like a little kick, try adding them. You can use as many or as little as you like, according to taste.
Sounds interesting, Pamela. I add apple or applesauce, onion & brown sugar. M-m-m, I can taste it now just thinking about it.
@Mary - I've never had a sweet version of sauerkraut. Now, I'm really looking forward to your recipe.
I think i will have to make a trip to Mary's house. The thought of ALL that home cooking.
