After a long, cold winter, it was glorious to be able to open up the windows and doors and let the sun in. I had some online work to do, so I took my laptop to the patio and loved every minute of it. Between the sunshine, little critters running around my yard, and the perfect meal my husband and I prepared, it was a perfect day.
For starters, I created a Cold Orzo Salad that included:
- Orzo, cooked and drained
- Olive oil and red wine vinegar
- Green pepper, red pepper, onion and cilantro, all chopped
- A few shakes of garlic salt
Next, I sliced fresh pineapple for grilling and chunked the rest of it into a wonderful fruit salad that included:
- Strawberries
- Pineapple
- Oranges
The kabobs were up to hubby who BBQ'd them to perfection. They included:
- Chunks of filet mignon - The price was deeply reduced. Otherwise, just about any cut of beef would do.
- Onions
- Green pepper
- Red bell pepper
Put all of this together and it was a perfect meal for a perfect day.
