Fast and Easy Appetizer - Chicken Mayonnaise on Crackers

When my daughter, Jaime, makes chicken salad for Zack she puts the chicken in a food processor because Zack doesn't like "chunks".  Zack calls it Chicken Mayonnaise.  Jaime's "chicken spread" was the inspiration for this appetizer recently when I needed something for a family party and had very little in the house to work with.

It was a hit!  Very tasty....visually appealing....fast and easy to make!

 

Start with leftover chicken.

 Process until very fine.

Add mayo.

Put chicken mayonnaise on crackers.

 Garnish with whatever you have on hand.

If you are going to travel with this appetizer, I suggest putting the chicken spread in a zip-lock bag.

 Once you arrive, arrange crackers on platter, cut a corner off the bag and squeeze chicken onto crackers.

 If you bring veggies in bags too, there are no containers to bring home.

Pretty much any veggie works as garnish.

 Grapes are really good too!

Sharon- sounds good.  But I have to say you have better "what you have on hands" than I would have. I have to go out to get those cute little pickles!!  Seriously, it sounds AND looks yummy!

Sally:  I would have "staged" the plate for better presentation if I had the time, or if it were for an actual party.  I put this plate together really fast so I would have a pic for the post....then I fed them to Jack and Zack for lunch.

I like the Spectrum mayo because it's made without soy, which I am allergic to.

Roger:  So the "no chunks" is a good thing, but the mayo is a no go.  You are probably better off...it's just extra fat.  I happen to love it....tuna salad, chicken salad, pasta salad, on a burger or steak sub or BLT...all the healthy stuff!

Kenneth:  Spectrum is my favorite...expensive, but it's organic and I really love the flavor.  I'm not a fan of soy....have heard some really frightening things about it.   I stay away from it.  It's not easy, it's in everything now!

I love the idea. It will be perfect use for the turkey leftovers after Thanksgiving dinner. I also like you tip to use plastic bags if you have to go to the party or picnic.

Janice:  I had to travel over an hour with the appetizer and I needed to keep the chicken cold.  I didn't want to have to clean a bowl and bring it back so I went with the baggie.  It really was very convenient.

Anna:  Now that you mention it, it was turkey that I used when I first made it for the family party.

Lloyd:   I use organic whole grain crackers and organic mayo....certainly not low fat or low calorie, but they are healthy.  Using color is key to the presentation!  

Valerie:  Sometimes the best ideas come when you are limited on time and/or ingredients!

Patricia:  Whip some up and impress your family and friends with YOUR creativity!
