Chile Time in NM
The 2013 Hatch Green Chile crop has come in a little early and you guessed it people are lining up to get their Chile around NM.
Sunday Debbie and I went to the local market and bought 35 pounds of the wonderful Hatch Green Chile. We now have the kitchen freezer and the garage freezer stocked with Chile.
There are several ways to freeze Green Chile we take the simpler way. This photo shows the Chilies roasted, cooled and ready for flash freezing.
- Pick out your Chiles & temperatures Mild / Hot / Hotter / Hotter Than Hot

Have the Chilies roasted where you purchase them / You can roast them on your grill at home. This is time consuming if you have a lot of Chiles.

Take home and leave in closed plastic bag for 2 hours to complete cooking

Open bag for an hour or so to let Chilies cool some

Flash freeze Green Chilies on cookie or cutting sheets

Bag frozen Chiles
- When you’re ready to use your Green Chilies simply run water over them slide the skin and stem off and rinse the seeds out.

With speakers on you can hear the snapping and crackling of the Hatch Green Chilies as they are being roasted. If only we could share the amazing aroma they provide during and after they are roasted. We do love Chile time in NM
