The 2013 Hatch Green Chile crop has come in a little early and you guessed it people are lining up to get their Chile around NM.

 

Sunday Debbie and I  went to the local market and bought 35 pounds of the wonderful Hatch Green Chile.  We now have the kitchen freezer and the garage freezer stocked with Chile.

 

There are several ways to freeze Green Chile we take the simpler way.  This photo shows the Chilies roasted, cooled and ready for flash freezing.

  • Pick out your Chiles & temperatures  Mild / Hot / Hotter / Hotter Than Hot
  • Have the Chilies roasted where you purchase them / You can roast them on your grill at home.  This is time consuming if you have a lot of Chiles.

  • Take home and leave in closed plastic bag for 2 hours to complete cooking

  • Open bag for an hour or so to let Chilies cool some

  • Flash freeze Green Chilies on cookie or cutting sheets

  • Bag frozen Chiles

  • When you’re ready to use your Green Chilies simply run water over them slide the skin and stem off and rinse the seeds out.

With speakers on you can hear the snapping and crackling of the Hatch Green Chilies as they are being roasted.  If only we could share the amazing aroma they provide during and after they are roasted.  We do love Chile time in NM

Hi John,

We just went yesterday and got two bags of extra hot chili's. One we will keep and the other will go to our niece in Little Rock.

Freeze and ship overnight. For some reason they cannot get them in their area.

I am the only one that eats them so a couple of pounds of the hot goes a long way.

Hi John,  Thanks for the reminder.  I need to get out and get some before they are gone.  I love to make home made chli rellenos and they are so much better with the fresh ones.  Yum.  And fresh tomatoes diced up on top along with green chili.  Ok - I'm hungry now.

I love roasted chiles!  We've got a few places around here who do a very good job with roasted chiles.  They just aren't that plentiful in the markets (regular or farmers) to bag 'em.

We love the hatch green chiles and there so many ways to cook with these chiles. we really like to eat eggs for breakfast with the hatched green chiles. Buying 35 ibs. of chiles and storing all of these items is no samll feat.

John, 35 pounds of Chile...wow sounds like it's a staple at every meal.  Also, getting them roasted where you bought them I would think is the way to go.  As soon as I submit this I'm going to check out your link for the Albuquerque Green Chile Stew.

Glad to see everyone today and hope you get your Green Chile fix today :)  I enjoyed some great Hatch Green Chile on my burger at lunch and am looking forward to some more chile tonight in my homemade omelet.

 Good video you have a  radio voice. The HEB and Central Market have their green chili roasts here in August. We had just about anything green chili you can have. I will have to make room in my freezer next year so we can have them year round.

 

PS Your video made me Homesick for New Mexico.
