Coconut and Tomato Spicy Chicken

I love to use my pestle and mortar every chance I get . . .  I think they call it stress relief!!

Here is a great excuse to use it again:

Coconut and Tomato Spicy Chicken

4 breast fillets of chicken chopped
2 portions of noodles (or rice or pasta)
3 large mushrooms chopped
1/4 tin coconut milk
1 tbsp tomato puree
1 tablespoon olive oil

4 cloves of garlic (if you like garlic... otherwise just 1 or 2)
1 tablespoon soy sauce
Ground black pepper
1/4 tsp nutmeg
1/4 tsp coriander
1/4 tsp mint
1/2 tsp chilli flakes
1/2 tsp mild chilli powder

1. combine all the ingredients in the bottom section using a mortar and pestle until a paste is formed.
2. Heat some olive oil on the frying pan.
3. Fry the chicken until cooked
4. Add the mushrooms and the paste and stir fry for a few minutes
5. Add the tomatoe puree and the coconut milk and simmer covered
for 10 minutes. If the sauce is still runny add 1/2 tsp of flour to
thicken.
6. Serve with noodles/rice/pasta
