Today is my husband's birthday - which one I'll not say :)
We are done with the festive foods of the holiday season and really don't enjoy dining out anymore, especially this time of year when both the food and the service is tired!
So, with some leftover duck I decided we should have Chinese Pancakes with shredded crispy duck and dipping sauce for a nice Birthday supper.
Normally we like Spring Roll Rice Paper but tonite I opted to make the Chinese Pancakes:
3 cups of flour with 1 and 1/3 cups of boiling water. Mix together til forms a ball, knead for 4 - 6 minutes til shiny and stretchy and then cover and let rest for 30 minutes.
Split into 8 pieces and roll out into 8 circles. Brush each circle with 1/2 tsp of Sesame Oil and 1 tablespoon of chopped green onion and a sprinkle of salt. Roll up like a jelly roll and then form the coil into a circle which you'll then roll out to 1/8" thick.
Cook each pancake seperately in a hot pan with a little oil and set aside.
I served them with thin julianne strips of cucumber and green onion with a dipping sauce made with
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar
- 2 teaspoons minced fresh gingerroot
- 2 teaspoons rice vinegar
- 1/2 teaspoon sesame oil
- 1/8 teaspoon crushed red pepper flakes
They fold in half like a soft taco! A small dish of rice and poof! A Birthday meal fit for a King :)
We're now both so full we have to hold off on the Birthday dessert! (They are really far more filling than we expected them to be.
If you give them a try, be warned. One did me and my husband managed to eat 3 but he's asleep now in his chair, LOL
