Today I am thankful for my Instant Pot, which is the modern-day version of a Pressure Cooker. I bought my first Instant Pot about 2 years ago. It took me a year to get up the nerve to figure out how to use it. I had heard a few horror stories about Pressure Cookers from days gone by and was a bit apprehensive.
Of course, the TV commercials made it look super easy but when it actually came, with all the instructions and caution messages it was a bit intimidating.
One day I just made up my mind I was going to figure it out and boy am I glad. I can make all kinds of things in it but my favorite thing is soups. I almost never use a recipe. I have some basics that I include but, otherwise, I just use a conglomeration of whatever I have on hand.
I enjoy making up a pot of soup, filling individual serving containers, and putting them in the freezer. I mentioned this in my "freezer" post the other day. Quick and easy healthy meals always on hand. A salad and a bowl of soup. Yummy.
It's actually quite amazing the variety of things that can be cooked in the Instant Pot. I subscribe to a few YouTube Channels. I watched several YouTube videos when I first started using it and that gave me confidence the confidence to embrace the possibilities.
Hi Carol Williams - I don't have a instant pot yet but I was thinking of getting one. My mom used to make things in the old pressure cooker.

I've never used an old style pressure cooker but I do love the new ones. Very safe and easy to use. There are things I do prefer to use the Crock Pot for but, mostly, I use my Instant Pot now. I hear ya about the appliance thing. I'm kind of a kitchen gadget junky but some of the newer appliances are multi-function. I was thinking about adding an air fryer but I don't eat a lot of fried foods unless I'm out somewhere and can't resist.

Good morning, Carol Williams If I knew how to properly use one, I'd be using it every single day.....many decades ago I had a very expensive pressure cooker.... that scared the B'Jesus out of me!!!! I never used it and gave it away.... didn't want a nickel for it....

The new pots have safety features that remove all the fear. The lid won't release until the pressure has fully released.
Hello Carol, I love mine and use it once a week and have no problem with it. I do have some great recipes that I do in it.

Okay so now the plan is that we are all going to Carol Williams home for home meade wine? Woo hoo! My parents used to make alcohol in the pantry using different fruits. And I do love a good moonshine. I haven't tried working with an instapot yet, but on Iron Chef they always did great things with their pressure cookers.

We don't have one but our daughters both do...or something very similar. I suppose we should get one, but given we have a crockpot not sure another appliance is needed. It's definitely gotten to be soup weather.

Yes, the Instant Pot is similar to a crockpot but much faster! There are some things that are better from the Crockpot, though.
I don't have an Instapot. However, like you, I love making soups, storing it in quart sized canning jars, and then putting them in the freezer. I also have cooking days, where I create my own "TV dinners" and freeze them. It is wonderful to have those available for convenience on days when I'm busy, or not as motivated to cook.

Hi Carol- I do not own an Insta-Pot but have a large slow-cooker. My grandmother had a pressure cooker and I remember her warning me never to open it once she had the lid sealed.
