Soup!
Perhaps now isn't the PERFECT soup weather here in Tucson AZ with daily temps soaring high 90's (unless it's chilled soup!!) but a dear friend of mine is looking at severe rehab from dental surgery and my response was...
"How about I make you some soups?"
Soup. I love it. For whatever reason it's nostalgic, warming, comforting...it's mental AND physical.
One of my favorite recipes is one of the easiest. The first time my oldest ate it, he said..."Write it down, Mom. Write down the recipe." He knew I have a penchant for throwing things together and never being able to make them again.
So I wrote it down.
Spicey SW Tortilla Soup
1 can broth
1 can water
1 lb chicken pieces (small)
1 T minced garlic
1 T taco seasoning
½ cup cilantro
3 little yellow and orange peppers
½ can green chillis
1 t. oregano
1 cup salsa
1 small can tomato sauce
Serves 4, fill bowls with tortilla chips and avocado, if desired. Sour cream too!
Top with soup and add pepper jack cheese.
I'm thinking about making a better, home-style version of Campbell's Bean with Bacon soup, too. It's a nostalgia thing.
And my friend's favorite is Corn Chowder, which she will have to eat first as with the cream, freezing it would get tricky.
