Migas A Mexican Breakfast
This is a close up picture of what this dish should look like. As you can see this dish can be served with fresh large chucks of avocadoes.
Megas are deliciously crunchy and I love eating this dish for breakfast with a hot cup of coffee. Many people do not have a clue as to what Migas are. The recipe is below if you care to try and make it. I think you will love this dish too!
Dice and keep separate a small bit of:
fresh tomatoes, onion, one jalapenos, cilantro Half cup or to taste Queso Blanco or regular Monterrey Jack cheddar cheese.
In a pan put a tablespoon or two of olive oil or you may use bacon grease when hot:
- tear up two or three corn tortillas to a quarter/coin size and stir fry in oil until hard; you don't want them to brown;
- add onion, jalapeno, and cilantro; tomato and sauté;
- add two or three eggs;
- salt and pepper to taste.
Serve with quartered pan fried or hash brown potatoes, bacon and a serving of re-fried pinto beans. Some people like black beans but they are not tasty to my pallet. Below is what mine looked like this morning. They were very good too!
Oh yeah you can server flour or corn tortillas with this dish!
