The globe artichoke, also known by the names French artichoke and green artichoke in the U.S., is a variety of a species of thistle cultivated as a food. The edible portion of the plant consists of the flower buds before the flowers come into bloom. Wikipedia
We have been enjoying these globe artichokes. They come in fresh from Castroville. Castroville is a small village about 5 miles from the Monterey Bay. They are known as the Artichoke Capital.
We cut them in half, steam them for about an hour. Then we brush them with olive oil and sea salt, and then roast them on the grill.
Happy Wordless Wednesday!
