Happy National Guacamole Day! (SEPT 16, 2019)
I don't normally share recipes or 'odd' holidays here but, this one may just be my favorite! I'm a huge avocado fan and if I'm not eating them alone with a little sea salt, I make guacamole.
I have recently been on a mad search for the perfect avocado toast. Of course, the best that I have made so far has been with all of the ingredients of guacamole - okay, with a few other things like smoked salmon and fresh dill!
Here is my guac recipe. I am often asked to prepare it for various gatherings and have honestly never written the recipe down. I had to make some yesterday to be sure I remembered to list all of the ingredients for you!
Ingredients
- 3 avocados - peeled, pitted, and mashed or sliced into bite-sized pieces.
- Juice of one lime
- 1-2 tso, pink Himalayan sea salt
- 1/2 cup diced red onion
- 3-4 Tbsp. fresh cilantro, chopped
- 1-2 tsp. minced garlic
- 2-3 plum tomatoes, diced or 1 cup cherry tomatoes, sliced in half
Directions
Mash together the avocados, lime juice, and salt. Mix in the onion, cilantro, tomatoes and garlic.
Serve with fresh baked tortilla triangles and ENJOY!
