Celebrate Fall with Apple Cake!
Apple season is here and I've been reading several posts about picking apples lately. We don't have apple orchards in our part of Florida so we have to rely on the new apple harvest from one of the Hernando County farmer's market in Spring Hill and Brooksville or the grocery store.
Since there is still a bit of a chill in the air from cool northern air being funneled down into Florida from the northern states as a result from hurricane Sandy, I decided this morning, to celebrate Fall with apple cake!
Apple Cake is comfort food and it sure smelled up the house in a delicious way!
Apple Cake Recipe
4 Eggs
1 cup of vegetable Oil
1 ¾ cups Sugar
1 tsp Vanilla
¼ cup orange or lemon juice
2 ¾ cups flour
1 TSP Baking Powder
1 tsp salt
6-10 medium apples - try Granny Smith, Jonathan, or any other apply you like
1 TSP Cinnamon, 2 TSP Sugar
Beat eggs and add oil, sugar, and lemon juice. Sift flour and baking powder into the mixture, add salt. Peel, core, and cut apples into chunks or slices. Toss with cinnamon and sugar.
Grease cake pan for one cake or two pie dishes to make two. I always sprinkle some Oats in the bottom of the pan as it bakes into the cake and makes it easier to remove cake from pan. Cover bottom of pan or pie plates with batter, keeping some aside. Spread apples over batter evenly. Then spread remaining batter over the apples, don’t worry if it doesn’t cover all.
Optional: add raisins, dried cranberries, or chopped walnuts to apple mixture.
Bake at 350 degrees Fahrenheit until a tester comes out clean. About 1.5 hours for one pan or 55 min for two.
Sprinkle with a dusting of confectioners sugar and serve with whipped cream or a la mode!
