This funky restaurant is a true Austin icon that has been around since 1982, and, one you should definitely visit! They have several locations so if you're in the mood for Mexican food and want a casual place this week-end to eat then make time!
CHUY'S https://www.chuys.com/
Chuy's is a fun Tex-Mex restaurant that serves authentic and fresh food in an atmosphere that everyone enjoys. Founders Mike Young and John Zapp made some fun decisions on decorating their restaurant. There's a hand carved wooden fish hanging from the ceiling, you could find hubcaps hanging above your booth and there is the ultimate Elvis shrine with him all decked out in blue velvet. A few of these eclectic touches will be found in every Chuy's restaurant.
The menu is made up of a combination of flavors, with recipes & ingredients from Mexican border towns, the Rio Grande Valley, deep South Texas, Austin and more. For example, their green chile recipe is from Epañola, New Mexico...their fajita marinade is an old family recipe from South Texas. The tortillas are hand-rolled from dough that is made from scratch every morning, every dish is made from scratch every day - never frozen. And each year Chuy's contracts with farmers in the Hatch Valley to grow over 1.75 million pounds of the freshest green chiles just for their restaurants. Every year there is a three week Green Chile Festival in each of their restaurants.
If you've never been to a Chuy's, here is a sampling of what is on their menu...On the Specials Menu there's the Chuychanga - a fried flour tortilla filled with fresh, oven roasted chicken, cheese, cilantro & green chiles, garnished with sour cream & your choice of sauce....the Elvis Green Chile Fried Chicken - a Chuy's original with a tender chicken breast breaded with Lay's potato chips, deep fried and smothered in green chile sauce and cheddar cheese served with green chile rice and refried beans.
Like Enchiladas? Then you must try the Chicka-Chicka Boom-Boom - freshly roasted, hand pulled chicken & cheese with Boom-Boom sauce made with cheese, roasted New Mexican green chiles, tomatillos, green onions, cilantro and lime juice. The Southwestern Enchilada is a New Mexican tradition - homemade blue corn tortillas stacked with freshly roasted hand pulled chicken, cheese & green chile sauce topped with a fried egg.
Finally, on the Combo menu there is the Elvis Presley Memorial Combo - a beef Tex-Mex enchilada, cheese Ranchero enchilada, chicken Tomatillo enchilada, a seasoned ground sirloin crispy taco & homemade tostada chips dipped in chile con queso ( a moment of silence please for the King!)
In addition to wonderful food, Chuy's is a staple at Christmas time with their annual Giving To Children Parade - enjoy this clip from a couple of years ago complete with a visit from Elvis:
