Yesterday evening when I posted about my family’s “Rockin’ Moroccan Pirate Party,”  I promised I’d provide the recipe for a dish enjoyed.  The Moroccan Meatball Tagine seemed to be enjoyed by most everyone present, including the picky eaters of the family.  
In traditional Moroccan cooking, a tagine is a cooking vessel with a conical shaped dome lid, which allows steam to roll back down inside the dome, and to create amazingly delicious dishes.

The following recipe for "Roasted Roots" is one I cooked up while family was home recently.  It went especially well with Prime Rib.

This weekend, there were wonderful Portabella mushrooms available at my local Farmer’s Market.  And they were reasonably priced.  After bagging up several of them, I came home and broiled up one of my really simple favorite treats. 
Only 3 ingredients are required.
Portabella Mushrooms Teriyaki Sauce Shredded Swiss Cheese  Instructions:  Marinate Portabellas in Teriyaki sauce for an hour or so.  Place on a baking sheet, cap down, stem up.  Add shredded Swiss cheese.  Broil in oven until golden brown, and desired tenderness (about 5 minutes).

Several weeks a go, while watching the delightful old movie, "Chocolat," I conjured a recipe that continued to percolate in my head.  For those, who have seen this flick, you will remember Vianne was an expert chocolatier.  She revealed the Mayans often mixed chili with chocolate, which I found intriguing.
For my recipe, I had the desired ingredients treasured away in my pantry.  I call it Chicken Tamale Pie Au Chocolat. 


For those of you who enjoy Mexican Sweet Corn Cake, and Chocolate Mole’ this recipe may be up your alley.  It’s worth a try in any case.

Local Farmer’s Markets in the Greater Sacramento area have been filled with wonderful peaches this season.  It is difficult to pass by the stands and not bring bushels home.
I generally make a point of attending the Farmer’s Market that gathers at Sunrise and Folsom Boulevards on Saturday mornings in the Light Rail Parking Lot.  
This evening I cooked up a quick treat I call “Drunken Peaches,” or “Tipsey Peaches.”  I don’t know what I was thinking, but they were gone before I snapped the picture.  But, I think the recipe is simple enough that you will easily get the idea.

Sacramento has been socked in with fog today, with chilly temperatures.  I have cooked up a New Orleans Style Meat Loaf.  I'm serving it with Carolina Low Country Potatoes.  Perhaps your family will enjoy the recipe in the future. 


INGREDIENTS:

It won't be long now, and I can't wait.  In just a few short hours my family will begin to gather from hither and yon for Thanksgiving dinner.
I wanted to take this opportunity to share one more recipe before the holiday.   
ANTIPASTO:
Ingredients-

THAI CHICKEN PEANUT SATAY 
 
iNGREDIENTS:
1 lb. skinless, boneless chicken breasts cut into strips 1" wide 1 tablespoon brown sugar 1 tablespoon yellow curry 1 teaspoon turmeric 2 tablespoon Thai fish sauce 2 tablespoon lime juice 1 tablespoon vegetable oil 1 12 oz can unsweetened coconut milk Jar Spicy Peanut Sauce (available at Trader Joe's, or Asian aisle of grocery stores) INSTRUCTIONS:
Combine together the brown sugar, yellow curry, turmeric, fish sauce, lime juice, vegetable oil, and coconut milk.  Place meat strips in the mixture and marinate for a couple hours minimum in refrigerator.

With Autumn upon us, here is a little recipe my family enjoys, which I think your family may enjoy as well.

Take the pumpkin and clean the inside.  Peel, core, and wedge enough apples to fill the cavity.   Mix together apples, raisins, dried cranberries, golden raisins, brown sugar, pumpkin pie spices, and walnuts.Place a stick of butter on top of the mixture once stuffed inside the pumpkin.Place pumpkin lid back on the pumpkin and cook in a water bath in a low oven (I use an oblong casserole dish, with about an inch of water in the bottom).  Bake at low-temperature (300-325 degrees) for 4 or … (23 comments)
