Secret Recipe Revealed! Pumpkin Bread
I have been finding many recipes being shared online of late, and I thought this might be an interesting thing to do. Let's make one thing perfectly clear, I am not a cook. I can barbecue with the best of them, and I even managed to boil some water this evening to help my wife while she entered a listing for me--but that is about the extent of my cooking prowess. My wife on the other hand, is forever being asked for recipes for the things that come out of our kitchen. Since she happened to bake a few loaves of Pumpkin Bread this afternoon, I snuck in and took a picture and swiped the secret family recipe to share.
Pumpkin Bread [supposedly super easy]
3 1/3 cups flour
2 tsp. baking soda
1 tsp. cinnamon
1 1/2 tsp salt
1 tsp. nutmeg
1 tsp. cloves
1/2 tsp. baking powder
3 cups sugar
1 cup vegetable oil
2/3 cup water
4 eggs
2 cups pumpkin (or close to it depending on can size)
1 cup raisins (optional)
1 cup chopped nuts (optional)
Combine all ingredients in a large bowl. Mix together until smooth. Pour batter into two greased and floured loaf pans. Bake at 350 degrees for 1 to 1 1/4 hours or until knife inserted in top comes out clean (don't overbake). Remove from pans and cool on cooling rack. Keep hungry people away for at least one hour!
